Are you out of ideas on what to cook for this weekend?

St.Jean-Baptiste day is almost here, and a long, nice, sunny weekend awaits us!

Maybe you’re out of ideas on meals for the next few days, and you don’t want to spend your time in the kitchen but rather enjoy the beautiful weather and the many activities that Montreal can offer. Yet when we say long weekend, it often means good meals with family or friends, don’t you agree with me?

So let me share with you one of my tips for a successful dish which is one of my favorite recipes! Easy, fast and delicious, it will delight your palate and those of your guests!

Preparation in 10 minutes, ready in under 20 minutes! I swear!

Grilled Salmon at “la Provençale”.

Here’s what you’ll need to feed four people:

  • Four pieces of salmon cut into the thickest part of the fillet
  • 60 ml olive oil
  • 10 ml smoked sweet paprika
  • 125 ml dried tomato pesto
    • 220 g dried tomatoes in olive oil
    • 2 cloves garlic
    • 50 g parmesan
    • 1 branch fresh basil
    • 1 pinch of paprika
    • 150 ml olive oil
    • Sea salt

Start by preparing your grill to make it to the maximum power when you put your salmon on it.

Then, prepare your homemade pesto. Mix all the ingredients in a blender. Pour it into a pot and place it in a cool corner.

Go buy your salmon in a good fish shop. Quality must come first! A good fresh salmon 🙂 If you live like me in Mile End, I recommend “Falero” on Park corner with Bernard.

Brush your salmon with olive oil and salt. Sprinkle with paprika, and spread the pesto to cover each square of salmon completely.

Add a little bit of olive oil on the top and place each square on the grid of your barbecue that you just turned off to cook with the residual heat. (Note that the firing varies depending on the thickness of your fish. However, it takes in general about 6-7 minutes for cooking).

Before serving, add a fresh basil leaf, a hint of paprika and voila! Ready to serve!

And obviously, the best for the end, serve this dish with a good glass of rosé from the South of France. Do well to keep it fresh once opened in an ice bucket or in your fridge. You will see the pairing rosé – Salmon – pesto works very well and is delicious!
